As promised, here is the recipe I used for the brownie bites...yes, they were yummy, but also really good for you! The recipe is simple too!
Black Bean Brownies
Set oven temp @ 350 degrees and coconut oil (or olive oil) an 8x8 baking dish and set it aside.
Into your blender put the following:
1 1/3 c. black beans (soft cook your own soaked beans or use 1 can of drained/rinsed beans)
3 eggs
3 tbsp. melted coconut oil
1/2 c. cocoa powder
1/2 c. coconut sugar (this is the best, but you can use agave too...if you like them sweeter, use 1/4 c. more)
3 tsp. vanilla extract (raspberry extract is good too, so is orange! - use 1 tsp. vanilla w/ 2 tsp. of the other)
1/4 tsp. salt
1 tsp. baking powder
Blend this thoroughly to a silky batter. Pour into prepared pan and bake 25 - 30 minutes, checking at 25 mins. to see if set batter is pulling away from sides - if so, take them out. I take them out at 25 mins. and let them cool in the pan on a rack so they come out like a truffly kind of texture, not dry. Once totally cooled, cut them into smallish squares and gently remove them to a platter to frost with......
Great Raspberry Glaze Cream Cheese Buttercream
1/3 c. melted coconut oil OR 1/2 stick softened sweet butter
1/3 c. fruit only raspberry preserves 1/2 pack softened cream cheese
3 tbsp. agave or coconut sugar
whip this in mini chopper and pour on 1 tsp. vanilla
or...cool in frig and whip with beaters
to spread on before cutting into squares. whip with beaters to fluffy and spread on top
of uncut brownies or break out your piping
bag and fancy tips and squeeze on some cute
rosettes!
These brownies are full of protein, fiber and are sweetened in a way that won't freak out your blood sugar!
